Ingredients

  • 3 large egg whites
  • 1/2 cup sugar
  • 1/2 tsp pure vanilla extract
  • 1 l/4 tsp kosher salt
  • 1 14oz pkg sweetened, shredded, coconut (about 5 cups)

Preparation

Step 1

Preheat oven to 325
Line 2 baking sheets with parchment paper

Whisk together egg whites, sugar, vanilla, and salt in a medium size bowl, until glossy and the sugar is almost dissolved. Fold in coconut stirring until evenly combined
Using a small ice cream scoop drop batter, in mounds (about 2 tbsp.)each about 1" apart. Bake rotating sheets about 1/2 way through until golden brown (about 20-25 mins) Let them cool before removing from tray
