Ingredients
- 1 refrigerated pie crust
- 1 pkg unflavored gelatin
- 1 C sugar
- 1/2 C fresh lime juice
- 1/4 C water
- 4 eggs; separated
- 1 tsp grated lime peel
- 2 drops green food color
- 1 C heavy whipping cream
Preparation
Step 1
Heat oven to 450*. Make pie crust as directed in box. Mean while in 1 qt sauce pan, combine gelatin, 1/2 C sugar, lime juice, water & egg yolks. Cook over med heat 6- 7 mins stirring constantly until mixture boils & thickens slightly. Remove from heat; stir in lime peel & food color. Pour mixture into lg bowl. Refrigerate until mixture mounds slightly, about 45 mins. In a lg bowl. Beat egg whites with electric mixture on high speed until soft peaks form. Gradually add remaining 1/2 C sugar beating until stiff peaks form. Gently stir in egg whites & whipping cream into cooled lime mixture. Spoon into cooled baked shell. Refrigerate until firm, about 2 hrs. Serve topped with whipped cream. Store in refrigerator.
