Ingredients
- 4 small pork tenderloins
- 4 garlic cloves
- 2 Tbsp fresh rosemary, chopped
- 1 Tbsp sage, chopped
- 6 Tbsp extra virgin olive oil
- salt to taste
- pepper to taste
- 4 medium russet potatoes, cut into 1” pieces

Preparation
Step 1
Pre-heat oven to 375ºF.
SEASON pork with garlic, rosemary, sage, extra virgin olive oil, salt and pepper. Allow to sit in marinade for 30 minutes.
PLACE potatoes on sheet tray and roast for approximately 30 minutes, or until fork tender.
GRILL marinated pork approximately 4-5 minutes on each side, scoring with diamond-shaped marks. Cut into slices.
SERVE pork garnished with roasted potatoes.
