BLACKBERRY PIE

Ingredients

  • 6 cups (1 3/4 pounds) blackberries
  • 1 cup sugar plus a couple of teaspoons for top crust
  • 1/3 cup flour
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon lemon or lime juice
  • 1 teaspoon grated orange zest
  • 2 disks refrigerated pie dough
  • 3 tablespoons unsalted butter
  • 1 egg

Step 1

Preheat the oven to 400 degrees F with a baking sheet on the middle rack. In a large bowl, toss the blackberries, sugar, flour, lemon juice, orange zest, cinnamon and nutmeg. Mix well and let stand for 15 minutes mixing occasionally.
Fit one round of dough into a pie plate.
Spoon the blackberry mixture into the pie shell. Dot the top with the butter. Place top crust and crimp the edge. Lightly beat the egg with 1 tablespoon water and brush on the top and sprinkle with sugar.
Place the pie on the hot baking sheet in the oven and bake 50 minutes to 1 hour until bubbly and crust is browned.
