Gingerbread Waffles

Waffles (all waffles) tend to cool quirky, so serve them on heated plates. Can serve with whipped cream, drizzle of maple syrup or dollop of applesauce.

Ingredients

  • 1/3 c. (packed) golden brown sugar
  • 1 lg. egg
  • 3/4 c. buttermilk
  • 1/4 c. mild (light) molasses
  • 3 Tbsp. butter, melted
  • 1 c. flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. ground ginger
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground allspice
  • 1/2 tsp. baking soda
  • 1/4 tsp dry mustard
  • 1/4 tsp. salt
  • 1/3 c. chopped raisins
  • 2 Tbsp. minced crystallized ginger
  • Additional melted butter
  • Whipped cream
  • Maple syrup

Preparation

Step 1

Whisk sugar and egg in med. bowl to blend well, about 2 minutes. Mix in buttermilk, molasses and butter. Combine flour, baking powder, spices, baking soda, mustard and salt in a small bowl. Add to liquid ingredients and whisk to blend. Stir in raisins and crystallized ginger.

Preheat waffle maker according to instructions. Brush with melted butter. Spoon appropriate amount batter onto waffle maker. Cover and cook until waffle is golden and cooked through. Repeat with remaining batter. Serve immediately with whipped cream and maple syrup.
