Spiced Yams with Pecans

Here's a warming winter dish that's perfect for the winter holidays. I've included a bit of butter here for its rich flavor, but if you'd like to make a vegan version, you could certainly replace it with another tablespoon of canola or coconut oil.

Ingredients
- 8 cups diced yams, cut into l-inch cubes
- 1/2 cup pecan halves (or walnuts)
- 2 tablespoons canola oil or melted extra virgin coconut oil
- 3 tablespoons maple syrup
- 1 tablespoon unsalted butter, cut into small pieces
- 1 1/2 teaspoons ground cinnamon·
- 1 1/4 teaspoons ground nutmeg, preferably freshly grated
- 1/2 teaspoon sea salt
Preparation
Step 1
Preheat the oven to 400°F.
Combine all of the ingredients in a baking dish and toss until the yams are evenly coated.
Cover and bake for 50 to 60 minutes, until the yams are tender. Taste and adjust the seasonings if desired. Serve immediately.
