Vegetable-Barley Paella

Ingredients

  • 3 1/2 cups vegetable of chicken broth
  • 3/4 cups pearl barley
  • 2 tbs olive oil
  • 1 medium onion cut into 1/4 inch, diced
  • 2 small zucchini, cut into 1 inch chuncks
  • 10 oz mushrooms, cut in half
  • 1 tsp salt
  • 1 tsp dried oregano
  • 1 medium head cauliflower
  • 2 medium carrots
  • 9 oz frozen green beans
  • 1 can black beans, rinsed
  • 1/2 cup green olives, chopped

Preparation

Step 1

1. In 4 qt saucepan, heat broth, barley, and 2 cups of water to boiling over high heat. Reduce heat to low, cover and simmer 1 hour.

2. Coat vegetables with olive oil, salt, and pepper, in plastic bag. Roast vegetables in oven at 425 for 20-30 min.

3. Mix barley, vegetables, beans, and olives together.
