Recipe from Nanny, a family favorite

Ingredients

  • 4 raw potatoes- russet
  • 2 eggs
  • 3/4 tsp. baking powder
  • flour
  • 1/4 lb. butter
  • 24 oz. cottage cheese, sauerkraut or sweet cabbage (i always prefer cottage cheese)
  • salt and pepper to taste

Preparation

Step 1

1. grate 4 potatoes with fine cheese grater. add 2 eggs and 3/4 tsp. baking powder. add flour until mixture is stiff like dough but is still sticky.
2. drop dough 1/2 tsp at a time into boiling water. they will sink to the bottom. after they rise, let them float 2 minutes. scoop them off and put them in a strainer, then rinse with cold water.
3. fry in butter, then add cottage cheese/sauerkraut/cabbage
