Ingredients
- 2 cups eggplants, cubed
- 1 onion, chopped
- 1 tablespoon olive oil
- 3 tablespoons butter
- fresh ground pepper
- 1 cup shredded cheese
- 1 cup milk
- 1 cup seasoned bread crumbs
- 2 eggs, beaten
Preparation
Step 1
Preheat oven to 350 degrees.
Heat oil in frying pan.
Sauté eggplant and onion until soft.
Remove pan from heat. Add butter and stir until melted.
Add remainder of ingredients and combine well.
Spray your casserole dish with cooking spray and add the eggplant mixture. Bake until golden and bubbly, approximately 45 minutes.
