Ingredients
- 3 medium tomatoes
- 1 medium garlic clove, crushed in press
- 1/2 C extra virgin olive oil
- 1 TBLS fresh lemon juice 1 tbsp
- salt & pepper to taste -
Preparation
Step 1
Peel tomatoes and cut in half. Squeeze halves into sieve over a medium glass bowl. Transfer tomato halves to cutting board and chop into small pieces. You should have approximately 1 cup (250 ml) of chopped tomatoes. Add tomatoes to tomato juice. Add garlic and olive oil. Stir to blend. Add lemon juice and season with salt and pepper. Taste for seasoning, adding more lemon juice if needed. Let vinaigrette stand, covered with plastic wrap at room temperature for at least 2 hours. Serve over your favourite salad.
