- heads of garlic

Step 1
Preheat oven to 400 degrees.
Remove cloves of garlic from bulb. Do not peel.
Lightly coat garlic cloves in olive oil.
Place cloves on cookie sheet that has a light olive oil coating.
Roast for 15 minutes or until garlic is soft.
Allow garlic to cool and remove the skins.
If not using immediately, place in an airtight container with just enough olive oil to cover in the refrigerator. Roasted garlic will keep for about a week.
