Ingredients
- 1-1/4 lb lean ground beef
- 1/2 lb ground pork
- 1 small celery rib with leaves, finely chopped
- 1/2 cup chopped white onion
- 1/2 cup bread crumbs
- 1 egg, lightly beaten
- 3/4 cup V-8 juice, low sodium
- 4 Tbsp Urban Accents Bloody Mary Drink Mix
- 2 Tbsp Olive Oil
Preparation
Step 1
Preheat oven to 375°. Over medium heat, cook onion and olive oil in skillet until translucent in color. In large bowl, combine the beef and pork with celery, bread crumbs, egg and cooked onion. In small bowl, combine V-8 juice with the Bloody Mary Drink Mix. Pour 1/2 cup liquid into large bowl and mix lightly, but thoroughly.
Shape mixture into 9” x 4” loaf and place on rack placed in rimmed baking sheet. Brush all sides of meatloaf with liquid, reserving some for later. Bake for 65-70 minutes to medium (160°) doneness, until not pink in center and juices run clear. During last 15 minutes of cooking, spoon the liquid mixture over the top of the loaf. Let meatloaf rest for 10 minutes on cutting board.
Served Best: Warm

Tip: For a leaner meatloaf, substitute ground turkey in place of the beef and pork
