Jalapeno Chicken & Rice Casserole

Ingredients

  • 2 cups cooked rice
  • 2 cups (8 oz) shredded Monterrey Jack cheese
  • 1 1/2 cups cooked, chopped chicken breast meat
  • 12 oz low fat evaporated milk
  • 1/2 cup chopped red onion
  • 2 large eggs, lightly beaten
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons, butter, melted
  • 1 tablespoon diced jalapenos
  • Salt

Preparation

Step 1

Preheat oven to 350 degrees F. Lightly grease 2 quart casserole dish. Combine all ingredients in casserole, mixing well. Bake for 45-50 minutes or until a knife inserted in center of casserole comes out clean.
