Ingredients
- 2 cups cooked rice
- 2 cups (8 oz) shredded Monterrey Jack cheese
- 1 1/2 cups cooked, chopped chicken breast meat
- 12 oz low fat evaporated milk
- 1/2 cup chopped red onion
- 2 large eggs, lightly beaten
- 1/4 cup chopped fresh cilantro
- 2 tablespoons, butter, melted
- 1 tablespoon diced jalapenos
- Salt
Preparation
Step 1
Preheat oven to 350 degrees F. Lightly grease 2 quart casserole dish. Combine all ingredients in casserole, mixing well. Bake for 45-50 minutes or until a knife inserted in center of casserole comes out clean.
