Ingredients
- 3/4 cup chopped pecans
- 2 1.2 cups all-purpose flour
- 1 cup sugar
- 1 tsp. ground cinnamon
- 3/4 tsp. baking soda
- 1/2 tsp baking powder
- 1/2 ts. salt
- 1/4 tsp. ground nutmeg
- 1 1/2 cups peeled, chopped fresh, ripe peaches
- 3/4 cup freshly grated carrots
- 2/3 cup vegetable oil
- 1/2 cup milk
- 2 large eggs - lightly beaten
Preparation
Step 1
Pre heat oven to 350.
Bake pecans in a single layer in a shallow pan 8-10 minutes or until toasted & fragrant, stirring halfway through. Cool 15 minutes.
Stir together flour, sugar, cinnamon, baking soda, baking powder, salt and nutmeg.
Add peac hes, carrots oil, milk and eggs. Add toasted pecans, stirring just until dry ingredients are mostened. Spoon batter into lightly greased 9x5 loaf pan.
Bake at 350 for 65 mins or until knife inserted in center comes out clean. Cook in pan of wire rack 5 minutes. Remove from pan to wire rack and cook completely (about 1 hour).
