Pear Upside Down Cake

Ingredients

  • 1/3 C butter or margarine
  • 1 C light brown sugar
  • 3-4 C sliced California Bartlett Pears
  • 2 C whole wheat pastry flour
  • 2 Tsp baking powder
  • 2 large eggs
  • 1 1/2 granulated sugar
  • 1 C heavy cream (un-whipped)
  • 1/2 C milk

Preparation

Step 1

Preheat oven to 350F. Butter sides of a 9x13" baking dish. Melt butter and pour into the bottom of the dish. Sprinkle evenly with the brown sugar. Arrange pears, cut side down, over the brown sugar, fitting tightly together.

Sift flour with baking powder. In a separate bowl, beat eggs with sugar until light. Stir in flour/baking powder and heavy cream. Mix well. Carefully pour the batter into the pan, careful not to disturb the pears.

Bake at 350F for 25 minutes, then reduce to 325F and bake for 25-30 more minutes. Remove from oven, let cool. Invert onto a serving platter. Serve with whipped cream or ice cream.
