Mint Chocolate Pudding Cups

Ingredients

  • 2 pkg. sugar-free instant chocolate pudding mix
  • 2-1/2 cups fat-free half and half
  • 1/2 cup fat free sour cream
  • 1 tsp. vanilla
  • 1/4 tsp. peppermint extract
  • 1-1/2 cups thawed frozen fat-free whipped topping, divided
  • 6 sugar-free peppermint patties, chopped

Preparation

Step 1

1. Whisk pudding mix with half and half in medium bowl according to package directions. Stir in sour cream and peppermint extract until smooth.
2. Divide half of mixture evenly into 6 parfait glasses or dessert cups. Top each with 2 Tbsp. whipped topping. Top with remaining pudding mixture.
3. Chill one hour or until completely cool. Garnish each serving with 2 Tbsp. whipped topping and 1 chopped peppermint patty.
