Sauteed Spinach and Vidalia Onions

Ingredients

  • 2 Tbsp. olive oil
  • 1 Vidalia or sweet yellow onion, thinly sliced
  • 1 pound baby spinach, washed well and drained
  • Coarse salt and freshly ground pepper

Preparation

Step 1

Heat oil in a large saute pan over medium-high. Cook onion, stirring occasionally, until softened, about 5 minutes. Add the spinach. Cook, tossing constantly to cook evenly, until wilted. Season with salt and pepper, and serve immediately.
