Minted Cucumber Salad

  • 2-3/4 medium cucumbers, peeled, halved, seeded and sliced
  • 1/3 cup red wine vinegar
  • 2 tablespoons and 2 teaspoons olive oil
  • 1/3 cup minced fresh mint
  • 2 tablespoons and 2 teaspoons minced fresh parsley
  • 1 tablespoon and 1 teaspoon sugar
  • 1-1/4 teaspoons grated orange peel
