Ingredients

  • 1 1/2

    cups flour

  • 1/4

    tsp nutmeg

  • 3/4

    cup butter

  • 1/2

    cup sugar

  • 1

    whole egg and 1 egg yolk

  • 1

    tsp vanilla

  • 1 3/4

    cup finely chopped walnuts

  • 1

    egg white, slightly beaten

  • Eggnog filling:

  • 6

    Tbsp butter

  • 1

    Tbsp milk

  • 1/8

    tsp nutmeg

  • 1 1/2

    cups confectioners sugar

  • 1/4

    tsp rum extract

Directions

Preheat oven to 375....bake 10 minutes Mix flour and nutmeg, set aside. Beat 3/4 cup butter and sugar in bowl until light and fluffy. Add whole egg, yolk and vanilla, mix well. Gradually beat in flour mixture until well mixed. stir in 1/2 cup of nuts. Refrigerate 30 min or until dough is easy to handle. Shape into 1 inch balls. Roll in egg white and remaining nuts. Bake and press thumb into center. When cool put filling in center and sprinkle with nutmeg.
