Ingredients
- 1 medium onion, sliced thinly
- 1 Tbsp extra-virgin olive oil
- 3 garlic cloves, minced (about 1 heaping Tbsp)
- 35-ounce can Italian plum tomatoes, chopped, juice reserved
- 1 can tomato paste
- salt and pepper to taste
- 1 Tsp dried oregano, basil, or rosemary

Preparation
Step 1
In a large nonstick skillet, cook the onion in the oil over moderately low heat for 5 minutes, or until it is softened. Add the garlic and cook for 5 minutes, or until the mixture is just golden. Add the tomatoes with their juice, the tomato paste, and the herbs. Bring to a boil and simmer 20 minutes or until thickened. Add salt and pepper to taste.
