Chicken Corn Chowder (Easy)

Ingredients

  • 4 cups chicken broth
  • 1 large skinless chicken breast (6-8 oz.)
  • 1 can corn kernels or same amount of frozen
  • 4 tbsps. Cornstarch in 1/4 cup of water
  • 2 eggs, beaten

Preparation

Step 1

1.Pour broth in large saucepan and add chicken breast and cover saucepan.

2.Bring to a boil and lower to a simmer until chicken breast is cooked through.

3.Remove chicken breast from broth and let cool enough to be handled.

4.Using fingers or two forks, shred chicken into small pieces.

5.Return chicken to pan with broth and add corn.

6.Bring broth back up to a boil.

7.Add cornstarch slurry and lower heat to a low boil and then lower heat to medium low so that broth is simmering.

8.Let broth simmer for 1-2 minutes until thickened.

9.Add beaten eggs slowly stirring broth with fork the whole time.

10.Let simmer for an additional 2 minutes. Serve
