Sugar Mint Choc Cookie

Ingredients

  • 1 (1 lb, 1.5 ounces) pouch Betty Crocker Sugar Cookie Mix
  • 1/2 cup butter, softened
  • 1/2 teaspoon peppermint extract
  • 6-8 drops green food coloring
  • 1 egg
  • 1 cup semi-sweet chocolate chips
  • 1 cup Andes creme de Menthe baking chips (OR more semi-sweet chocolate chips if you can’t find mint chocolate baking chips)

Instructions
1. Pre-heat the oven to 350.
2. In a large bowl, combine the sugar cookie mix, butter, peppermint extract, food color, and egg until a soft dough forms.
3. Stir in the chocolate chips and the Andes Mint chips (if you’re using these).
4. Drop them by the rounded teaspoonful onto an ungreased cookie sheet, about 2 inches apart.
5. Bake for 8-10 minutes, cooling for a minute or two on the cookie sheet before moving them to a wire rack to cool completely.
