Fried Olives

Use pitted olives in this recipe. You can use just about whatever olives you prefer.

Ingredients
- 2 Tbsp Parmesan cheese, grated
- 2 Tbsp fresh Italian parsley
- Oil for frying
- 40 pitted olives
- 1/2 cup all purpose flour
- Salt and pepper to taste
- 3 eggs
- 2 cups breadcrumbs

Preparation
Step 1
Place oil in a Dutch oven, 1/3 of the way up. Heat oil to 350 degrees.
Drain the olives and dry them completely..
Combine the Parmesan and parsley. Stuff each olive with a little bit of the mixture.
Place the flour in one dish and season with salt and pepper. Place the eggs in a second dish. And place the breadcrumbs in a third dish.
Dredge each olive in the flour, then the eggs and then the breadcrumbs. Pack the crumbs around the olive if necessary.
Place the olives on a clean plate and refrigerate until ready to cook.
Fry for 1-2 minutes.
