PORK-Slow Cooker Sausage, Sweet Potato and Black Bean Chili

Ingredients

  • 3 servings
  • 6 oz. ground or cooked and sliced Italian sausage or chorizo or combination
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1/2 cup minced sweet peppers
  • 1 teaspoon chili powder
  • 1/3 teaspoon ground cumin
  • 1 cup beef broth
  • 1 can fire-roasted tomatoes
  • 1 small can black beans, drained, rinsed
  • 1 1/2 cups diced sweet potatoes, 3/4-inch cubes
  • 1/3 cup shredded Mexican cheese blend (1.5 oz)

Preparation

Step 1

*Cook* sausage over medium heat 8 to 10 minutes, stirring occasionally, until sausage is thoroughly cooked; drain.

2 Spray 5- to 6-quart slow cooker with cooking spray. In cooker, mix sausage and remaining ingredients.

3 Cover; cook on Low heat setting 5 to 6 hours. Stir well before serving. Top each serving with cheese. Serve with refrigerated crescent dinner rolls.

A dollop of sour cream and chopped fresh cilantro take this chili to another level.
