Banana-Brick Candy

Ingredients

  • 1 kilogram of mashed bananas - that is about 8-9 bananas (including some of the banana peals 3-4, washed)
  • 1 kilogram of sugar
  • 1/2 cup of orange juice
  • Juice from one lemon and its grated peal

Preparation

Step 1

Mix all (including the banana peals) onto a large pan and start cooking on high until liquidly. Put this mixture through a blender (or food processor) and return to finish cooking.

Keep mixing until it is thick and you can see the bottom of the pan (about 1/2 hour). The mixture will go from yellow, to orange and a red-brown color when it's done and the consistency is of play dough.

Butter a cookie sheet with butter and spread the candy on it. Wait until it can be handled, cut in strips and cut the strips to form the Banana-Brick Candy. I used the kitchen scissors to cut the strips and a knife for the rest.

Be careful from the hot splattering, a tall pot and long mixing spoon is a good idea.
