White Veggie Lasagna

Ingredients
- 1 pack frozen spinach
- 2 9 oz. Alfredo sauce
- 1/2 C skim milk
- 8 oz. lasagna noodles
- 1 pint ricotta
- 1 egg
- zucchini, red pepper, onion (chopped)
- mozzarella (to sprinkle on top)

Preparation
Step 1
Cook frozen spinach for four minutes in the microwave. Mix Alfredo sauce and milk together. Spray pan with cooking spray. Mix spinach, ricotta and eggs. Put 1/2 cup pasta sauce in pan and layer with three noodles. Top with half of the spinach mixture then veggies. Layer three noodles then add 1.5 cups sauce and top with the rest of the spinach mixture. Layer again with veggies, noddles, sauce and then top with mozzarella. Spray one side of foil with cooking spray and cover the lasagna with the sprayed side down. Bake for 50-60 minutes at 350 degrees.
