Rock & Roll Corn Muffins

Ingredients

  • 1/2 Cup Butter
  • 2/3 Cup Sugar
  • 1/4 Cup Honey
  • 2 Eggs
  • 1/2 tsp Salt
  • 1 1/2 Cups All Purpose Flour
  • 3/4 Yellow Corn Meal
  • 1/2 tsp Baking Powder
  • 1/2 cup Milk
  • 3/4 Cup Frozen Corn

Preparation

Step 1

1. Preheat your oven to 400�F.

2. Mix together the butter, sugar, honey, eggs, and salt in a large bowl.

3. Add the flour, cornmeal and baking powder and blend thoroughly. Go ahead and add the milk while mixing.

4. Add the corn to the mixture and combine by hand until corn is worked in.

5. Grease or spray a muffin pan and fill each cup with batter. This is enough batter for a dozen muffins.

6. Bake for 20-25 minutes.

I have added a handful of cheese to this recipe and that works great too. ANother nice addition is some garlic powder or finely diced onions.
