Yogurt Corn Bread

  • 1 C flour
  • 3/4 C corn meal
  • 1 C plain yogurt
  • 2 to 4 T sugar or honey
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 egg
  • 1/4 C milk
  • 3 T. melted butter
  • 1 T. oil

Step 1

Sift together corn meal, sugar, baking powder, soda and salt into a large bowl. Make a well in the center and add yogurt, egg, milk, melted butter, and oil. Stir together until blended.

Transfer into a greased muffin tin or square pan. Bake in a pre-heated oven at 400 degrees 25 to 30 minutes, or until golden brown.
