Green Salad w/ Strawberries & Goat Cheese

Ingredients

  • 1 T maple syrup or brown sugar
  • 2 T red wine vinegar
  • 1 T extra virgin olive oil
  • 1/4 tsp. salt
  • Ground pepper to taste
  • 3 c. baby spinach
  • 3 c. watercress (stems removed)
  • 2 1/2 c. sliced strawberries
  • 1/3 c. fresh chives
  • 1/2 c. toasted pecans
  • 1/4 c. crumbled goat cheese

Preparation

Step 1

Whisk maple syrup (or brown sugar), oil, vinegar, salt and pepper in large bowl. Add spinach, watercress, strawberries and chives. Toss to coat. Divide the salad among 4 plates and top with pecans and goat cheese.


To toast pecans:
stir constantly in a small dry skillet over medium heat until lightly browned (about 2-4 minutes)
