Ingredients
- 1/2 cup (1 stick) plus 1 Tablespoon butter
- 2 cup brown sugar
- 2 Tablespoons maple syrup
- 1 teaspoon cinnamon
- 3 medium apples, peeled and diced
- 1 loaf bread (about 8 cups cubed)
- 6 large eggs
- 2 1/2 cups half and half
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 1/2 cup dried cranberries
- Whipped cream for serving
- Maple syrup for serving
Preparation
Step 1
Grease a 9 x 13 inch baking dish with 1 Tablespoon butter and set aside.
In a small saucepan, melt one stick of butter, brown sugar and maple syrup. Stir until the sugar has dissolved and continue cooking for 3-5 minutes or until it is thick and bubbly. Add the cinnamon and diced apples and stir to coat.
Pour about 1/2 of the caramel apples into prepared baking dish; top with 1/2 of the bread cubes. Repeat one more layer of apples and bread cubes. Press down slightly on the bread.
In a bowl, whisk together the eggs, half and half, vanilla and salt. Pour egg mixture over the apples and bread. Sprinkle with dried cranberries. Cover with foil and refrigerate overnight.
Preheat oven to 350 degrees. Bake for 35-45 minutes, or until the top is crispy and golden brown.
Let sit five minutes before serving. Serve with whipped cream and/or warmed maple syrup.
