Mozzarella Meat Loaf

Ingredients

  • 2 pounds 93% Lean ground beef
  • 2 eggs, slightly beaten
  • 1 cup saltine cracker crumbs
  • 1 cup milk
  • 1/2 cup grated parmesan cheese
  • 1/2 cup chopped onion
  • 1 1/2 tsp salt
  • 1 tsp dried oregano
  • 1 (8 oz) can pizza sauce
  • Mozzarella cheese, sliced
  • 1 green pepper, cut in rings
  • sliced mushrooms
  • 2 Tblsp butter

Preparation

Step 1

Mix together ground beef, eggs, cracker crumbs, milk, parmesan cheese, onion, salt, and oregano. Pat into 9x5x3 loaf pan. Bake at 350° for 1 ¼ hours or until meat is no longer pink; drain.

Spoon pizza sauce over top. Cover with mozzarella cheese slices and return to oven for 10 minutes, or until cheese melts.

Meanwhile, sauté green pepper and mushrooms in butter.

When meatloaf is done, top with sautéed pepper and mushrooms.
