Pumpkin Bread

Ingredients

  • 1 1/2 cups golden brown sugar, packed
  • 1 cup cooked or canned pumpkin puree
  • 2/3 cup vegetable oil
  • 2 eggs
  • 1/4 cup water
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 3/4 cup raisins
  • 1/2 cup chopped walnuts or pecans

Preheat oven to 350 F. Grease 9-by-5-by-3-inch loaf pan. In large bowl, combine sugar, pumpkin, oil, eggs and water; blend well. Combine flour, soda, salt, nutmeg, cinnamon and ginger; stir into pumpkin mixture. Stir in raisins and nuts. Scrape into loaf pan. Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Remove from pan; cool on rack.
