Blueberry Patch Muffins

Ingredients

  • Batter:
  • 2 cups sifted flour
  • 1/3 cup sugar
  • 3 tsp baking powder
  • 1 tsp salt
  • 1 egg, well beaten
  • 1 cup milk
  • 4 tbsp butter, melted
  • 1 cup fresh blueberries
  • Topping:
  • 1 tbsp sugar
  • 1 tsp grated lemon rind

Preparation

Step 1

Sift flour, sugar, baking powder and salt in a large bowl.

Combine egg, milk, and melted butter in a small bowl. Add wet ingredients all at once to dry ingredients. Stir quickly and lightly just until liquid is absorbed (batter will be lumpy). Gently fold in blueberries.

Spoon into muffin cups filling each cup 2/3 full. Sprinkle topping mixture over the top.

Bake at 425 degrees for 20 minutes.
