Wild Rice Dressing

Ingredients

  • 1 tsp olive oil
  • 1 1/2 cups chopped celery
  • 1 c chopped onion
  • 1 c uncooked wild rice
  • 2 minced garlic cloves
  • 4 c low sodium chicken or vegetable broth
  • 1 1/2 tsp chopped fresh sage
  • 1 c uncooked long-grain brown rice
  • 1/2 c dried sweet cherries
  • 1/2 c chopped dried apricots
  • 1/2 c chopped toasted pecans
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt

Preparation

Step 1

In a dutch oven over medium high heat, add olive oil, celery, onion, wild rice and garlic to pan. Saute 3 minutes. Stir in broth and sage, bring to a boil. Cover, reduce heat, and simmer 25 minutes. Stir in brown rice and bring to a boil. Cover, reduce heat and cook for 30 minutes or until liquid is absorbed. Remove from heat, let stand for 10 minutes. Stir in dried fruit, pecans and season as desired.
