Ingredients
- 1 lb ground turkey
- 1 medium yellow onion (medium dice)
- 1 sweet bell pepper (medium dice)
- 1/2 cup of diced portobello mushrooms
- 2 cups red wine
- 1/4 cup crushed crackers
- 2 eggs
- 1 T ketchup
- 1 T worchestershire
- 2 T chopped parsley
- 1 T thyme
- 1 T basil
- 1 tsp oregano
- 1/4 tsp red pepper flakes
- 1 tsp salt
- 1 tsp pepper
- vegetable oil to coat pan

Step 1
Saute onions, bell peppers, and mushrooms in oil in a large pan over medium high heat to caramelize for about 7 minutes.
Add wine and dried herbs and spices. Bring to a boil.
Reduce heat to medium low and simmer to reduce for 10 minutes.
Set aside to cool.
Beat eggs in a large mixing bowl.
Mix together eggs, ground turkey, crackers, ketchup, worchestershire sauce, and the wine and vegetable mixture.
Place in a loaf pan and bake at 350 degrees for 40 minutes.
