Ingredients

  • 1

    lb ground turkey

  • 1

    medium yellow onion (medium dice)

  • 1

    sweet bell pepper (medium dice)

  • 1/2

    cup of diced portobello mushrooms

  • 2

    cups red wine

  • 1/4

    cup crushed crackers

  • 2

    eggs

  • 1

    T ketchup

  • 1

    T worchestershire

  • 2

    T chopped parsley

  • 1

    T thyme

  • 1

    T basil

  • 1

    tsp oregano

  • 1/4

    tsp red pepper flakes

  • 1

    tsp salt

  • 1

    tsp pepper

  • vegetable oil to coat pan

Directions

Saute onions, bell peppers, and mushrooms in oil in a large pan over medium high heat to caramelize for about 7 minutes. Add wine and dried herbs and spices. Bring to a boil. Reduce heat to medium low and simmer to reduce for 10 minutes. Set aside to cool. Beat eggs in a large mixing bowl. Mix together eggs, ground turkey, crackers, ketchup, worchestershire sauce, and the wine and vegetable mixture. Place in a loaf pan and bake at 350 degrees for 40 minutes.
