Ingredients

  • 6 boneless chicken breasts
  • Salt to taste
  • Fresh ground black pepper
  • 2 minced garlic cloves
  • 2 cups chicken broth
  • 4 carrots cut in 2 inch pieces
  • 3 leeks - white part only - washed and chopped
  • 1 bay leaf
  • 1 10oz pkg frozen peas thawed
  • 2 tbsp butter
  • 3 tbsp flour
  • 1 tsp dry thyme
  • 2 onions halved sliced thick
  • 1/2 cup half and half

Preparation

Step 1

1. Sauté minced garlic in butter 1 minute; add flour and cook; stir until smooth
2. Pour in broth and thyme; stir until thickened
3. In slow cooker, layer onions, carrots, chicken then leeks. Pour sauce over all. Add bay leave and cook on low all day
4. Turn on high, stir in half and half and peas. Cover and cook for another 15 minutes
