Rock & Roll Bleu Cheese Macaroni & Cheese

Ingredients

  • 16oz package of uncooked noodles (use your favorite style)
  • 2 T Butter (unsalted)
  • 1/2 cup Green Peppers
  • 1/2 cup Red Peppers
  • 3/4 cup Heavy Cream
  • 8 oz Plain Yogurt (Non Fat is good)
  • 1 cup crumbled Bleu Cheese
  • 1 1/2 cups shredded Parmesan Cheese
  • 1/3 cup All Purpose Flour
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1/2 cup Bread Crumbs for topping

Preparation

Step 1

1.Boil a pot of lightly salted water. Add macaroni and cook for 8 to 10 minutes or until al dente; drain and rinse. Set aside.

2.In a saucepan over medium heat combine butter, salt, pepper and bell peppers. Simmer until heated.

3.Stir in cream, flour, yogurt, bleu cheese and Parmesan cheese. Heat until cheese has melted. Keep whisking to prevent lumps and burning.

4.In a large bowl combine cheese mixture and noodles. Tranfer to a casserole type baking dish. Sprinkle bread crumbs evenly on top.

5.Bake on 350 for 20 minutes and serve.
