Ingredients
- 6 slices bacon
- 6 c. hash browns
- 3/4 c. green pepper,chopped
- 1/2 c. onion, chopped
- 1 t. salt
- 1/4 t. pepper
- 6 eggs
- 1/2 c. shredded cheddar cheese
Preparation
Step 1
In large skillet, over medium hear, cook bacon until crisp. Remove bacon; crumble & set aside. Drain; reserving 2 T. of drippings. Add potatoes, green pepper, onion, salt & pepper to drippings; cook & stir for 2 min. Cover & cook, stirring occasionally, until potatoes are browned & tender, about 15 minutes. Make 6 wells in potato mixture; break one egg into each well. Cover & cook on low heat for 8 - 10 min. or until eggs are completely set. Sprinkle with cheese & bacon.
