Ingredients
- 1 1/2 c flour
- 2/3 c sugar
- 1/2 c cornmeal
- 1 Tbs baking powder
- 1/2 tsp salt
- 1 1/4 c milk
- 2 eggs, lightly beaten
- 1/3 c oil
- 3 Tbs butter, melted
Preparation
Step 1
Preheat oven to 350. Grease 8 in square baking pan.
Combine dry ingredients. Combine milk, eggs, oil and butter in separate bowl and mix well. Add to flour mixture and stir just till blended.
Bake 35 mintues.
For corn muffins, spoon batter in to muffin cups, 2/3 full. Bake for 18-20 minutes.
