Asian Chicken Salad

Ingredients

  • Slaw:
  • 2 1/2 cups shredded cooked chicken breasts
  • 3/4 cup finely chopped celery
  • 1/2 cup sugar snap peas
  • 1/2 cup chopped red/yellow bell pepper
  • 1/4 cup finely chopped onion
  • 1 (10 oz) pack angel hair slaw
  • 1 (8 oz) can sliced water chestnuts, drained and chopped
  • Remaining Ingredients:
  • 1/4 cup slivered almonds, toasted
  • 1 tsp sesame seeds, toasted
  • Dressing:
  • 1/4 cup cider vinegar
  • 1/4 cup rice wine vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 2 tsp soy sauce
  • 1/4 tsp garlic powder
  • Black pepper to taste

Preparation

Step 1

Slaw:
Combine all ingredients in large bowl.
Dressing:
Combine all ingredients in small bowl. Stir with whisk.

Pour dressing over slaw mix; toss to coat. Cover and chill 1 hour.
Sprinkle with almonds and sesame seeds before serving.
