7-Up Salad

Ingredients

  • 2-3 oz lemon gelatin
  • 2 cups boiling water
  • 1 (20 oz) can crushed pineapple, drained (reserve juice)
  • 2 cups 7-Up
  • 2 cups small marshmallows
  • 4 large bananas, diced
  • 2 T flour
  • 1/2 cup sugar
  • 1 egg, beaten
  • 1 cup pineapple juice (reserved juice)
  • 2 T butter
  • 1 cup heavy cream, whipped

Preparation

Step 1

Dissolve gelatin in water; cool. Add pineapple, 7-Up, marshmallows, and bananas. Place mixture in 9x13 dish; chill until firm.

Mix flour and sugar; add beaten egg, then pineapple juice. Cook, stirring constantly. Take from heat and add butter. When cool, add cream that has been whipped. Spread on gelatin layer. Chill.
