Ingredients
- Sauce:
- 8 skinless boneless chicken breasts, or 6 skinless thighs and 4 breast halves
- 4 cup rice krispies
- 2 tsp cumin
- 1 1/2 tsp granulated garlic
- 2 Tbs paprika
- 3/4 cup parmesan cheese, grated
- 2 eggs
- 6 oz andouille sausage, chopped
- Chopped parsley
- Grape tomatoes
- 1 cup fat free yogurt
- 1 tsp cumin
- 1 Tbs chopped parsley
Preparation
Step 1
Saute sausage and drain. Roughly crush rice krispies. Put rice krispies in large flat bowl and add cumin, garlic, paprika, parmesan cheese, salt and pepper. Stir in cooled sausage.
Beat eggs. Dip chicken in eggs, then in dry mix, pressing to coat. Put chicken on baking sheet sprayed with pam.
Bake 350, for 30 min. Garnish with chopped parsley and tomatoes.
Sauce: Add 1 tsp cumin and 1 Tbs chopped parsley to 1 cup yogurt and mix.
Serve sauce on the side.
