SWEET POTATO CASSEROLE

Ingredients

  • 3 cups cooked, mashed sweet potatoes,
  • 2 about 2 lbs.
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1/4 cup butter, softened
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1/4 cup butter/margarine
  • 1/2 cup brown sugar, packed
  • 1/4 cup all purpose flour
  • 1/2 cup chopped pecans

Preparation

Step 1

Mix first 6 ingredients together. Put into 2 quart casserole

Melt butter in small saucepan. Add brown sugar, flour andnuts. Stir well. Sprinkle over top. Bake uncovered in 350 oven for about 30 minutes.

Variation: Add 1/2 tsp each of cinnamon and nutmeg to first ingredients. Hot or cold you will think you are eating dessert. Delicious
