Almond Filled Cookie Cake

Ingredients

  • Crust:
  • 2 2/3 cups flour
  • 1 1/3 cups sugar
  • 1 -1/3 cups butter, softened
  • 1/2 tsp. salt
  • 1 egg
  • 1/2 tsp. almond flavoring
  • Filling:
  • 1 cup ground almonds
  • 1/2 cup sugar
  • 1 tsp. lemon peel
  • 1 egg, slightly beaten
  • 1/2 tsp. almond flavoring
  • Whole almonds to decorate

Preparation

Step 1

Heat oven to 325 degrees. Grease 9 or 10 inch spring form pan.
For crust, blend all ingredients until a soft dough forms.
Divide dough in half and spread half in bottom of greased pan.
In separate bowl, blend all filling ingredients and spread over crust to within 1/2 " of sides.
Between sheets of waxed paper, roll out remaining dough to 9 or 10 inch circle to fit pan.
Remove top layer of wax paper, invert dough over filling, remove 2nd piece of wax paper and press dough into place.
Garnish with whole almonds.
Bake for 55 to 65 minutes or until lightly golden brown.
Place foil or an extra cookie sheet below pan to catch any spillage, as the butter does seep out big time.
Cool 15 minutes and remove sides of pan.
Cool completely and sprinkle with powdered sugar.
