Ingredients

  • ¼

    cup butter, softened

  • ½

    cup packed brown sugar

  • ¼

    cup unsweetened cocoa powder

  • 1

    tablespoon milk

  • 1

    teaspoon vanilla

  • ¼

    teaspoon baking soda

  • cup all-purpose flour

  • 4

    ounces bittersweet chocolate, chopped

  • 1-½

    teaspoon shortening

  • ½

    teaspoon mint extract

  • 4

    ounces white chocolate baking bar

Directions

1. Preheat oven to 375 degrees F. 2. In a large bowl, beat together the butter, brown sugar, cocoa powder, milk and vanilla with an electric mixer until combined. 3. Beat in baking soda and as much of the flour as you can. 4. Stir in remaining flour by hand until combined. 5. Shape the dough into a ball. 6. Divide dough in half. 7. On a lightly floured surface, roll each half to 1/16" thickness. 8. Cut with small round cookie cutters. 9. Place on ungreased cookie sheets. 10. Bake 4 to 5 minutes or until edges are firm. 11. Cool on cookie sheet for 1 minute. 12. Transfer to wire racks; cool completely. 13. In a heavy saucepan, melt chocolate and shortening over low heat; stirring occasionally. 14. Remove from heat. 15. Stir in mint extract. 16. Let stand until cool enough to handle. 17. Melt baking bar in another pan over low heat; stirring occasionally; let stand. 18. Transfer the warm chocolate mixture to a sealable plastic bag. 19. If using, transfer melted white baking bar to a second bag. 20. Snip a 1/8" corner from the bags; squeeze and gently drizzle the melted chocolate over the cookies.
