Salmon with Spinach and Mustard

Ingredients

  • Large fillet of salmon
  • Large onion, chopped
  • fresh garlic
  • fresh mushrooms, chopped
  • 1 -red pepper (optional)
  • 2 - pkgs. chopped frozen spinach, thawed, drained
  • 2 -eggs
  • Feta cheese
  • Grey Poupon Mustard

Preparation

Step 1

*Saute large onion w/ fresh garlic until translucent

Add chopped fresh mushrooms, any type or mixture

Add chopped red pepper (optional)

Add 2 packs chopped frozen spinach drained

Add 2 eggs

Add Feta

Cool mixture.

Use broiler pan w. foil or ovenproof metal serving dish oiled.

Cover fish w/spinach mixture top with generous amount of grey poupon mustard.

For stronger flavor, spread grey poupon mustard on fish and then on top of spinach.

Sprinkle paprika on top.

Bake 375-400., 375 convection for 20 minutes.
