Ingredients
- 1 3lb broiler-fryer, cut in quarters
- salt and pepper
- paprika
- juice of 1/2 lemon
- 2 tsp salad oil
- 1 tsp tarragon
Preparation
Step 1
Sprinkle chicken with salt, pepper and paprika.
Line broiler pan with foil. Turn on broil and place pan 7 to 8 inches from heat.
Place chicken, skin side down, on pan. Combine lemon juice, salad oil, and tarragon; brush 1/2 mixture over chicken.
Broil 30 miutes, brushing occasionally with pa drippings. Turn chicken and brush with remaining lemon-herb mixture. Broil 15-30 minutes longer, brushing occasionally.
