Ingredients
- 1-3 lb pork loin boneless
- 2 lbs sauerkraut
- 1 medium onion diced
- 2 T caraway seeds
- 1/4 c brown mustard
- salt and pepper
- 4 apples peeled, cored and diced

Preparation
Step 1
Heat a tablespoon of olive oil in large pan. Season the pork roast and brown on all sides. Spread the mustard on top. Bake for 2 hours uncovered at 325 degrees. Remove roast and add onions to pan. Cook until translucent and add sauerkraut, apples, and caraway seeds. Add roast to top. Cover and bake 1 hour longer.
