Ingredients
- 1 cup rolled oats
- 1 cup flour
- 1/3 cup sugar
- 3 tsp. baking powder
- 1 tsp. salt
- 1/2 - 1 tsp ground nutmeg
- 1 - 2 tsp cinnamon
- 1 cup raisins or chopped dried apricots
- 3/4 cup chopped nuts
- 1 egg beaten
- 1 tsp pure vanilla extract
- 1/2 cup oil
- 3/4 cup milk
Preparation
Step 1
Preheat oven to 400. In a large bowl, combine the oats, flour, sugar, baking powder, salt, nutmeg, and cinnamon. Mix well. Add the raisins and nuts and mix. In a separate bowl, combine the egg, vanilla, oil and milk. Add to the dry ingredients and stir just until moistened. Pour into a greased muffin tin, or use paper liners. Bake at 400 for about 15 minutes.
